Even though this breakfast tarte has been a staple for a while now because it’s 1) super easy to make in advance 2) high in protein and good fats and 3) pretty d-e-l-i-c-i-o-u-s, I have just come to realize that I still haven’t shared it on here. While I usually have it as a light breakfast, it also goes well as a sweet treat in the afternoon or after dinner. Mix in some chunks of apple and chopped walnuts, and don’t hold back on the cinnamon and you get a high protein “carrot cake like” tarte. So flavourful and so yummy!

High Protein Carrot Breakfast Tarte
WHAT YOU NEED:
- 200g mashed carrots
- 100g grated zucchini
- 100g low fat curd
- 2 eggs
- 30g / 1 scoop vanilla protein powder
- 1 tsp. baking powder
- 1 tsp. coconut sugar
- 1 tsp. cinnamon
- optional: 1 finely cubed apple, 20g diced walnuts
HOW TO:
- Preheat the oven to 200° C.
- Grate zucchini.
- Mix the remaining ingredients until you get a smooth dough-like texture and combine with the grated zucchini.
- If desired, add finely cubed apple and/or diced walnuts and bake tarte at 200° C for round about 20 Minutes or until golden brown.
WAS IHR BRAUCHT:
- 200g Möhrenpürree
- 1/2 Zucchini, geraspelt
- 100g Magerquark
- 2 Eier
- 30g / 1 Scoop Vanilla Protein Powder
- 1 TL Backpulver
- 1 TL Kokosblütenzucker
- 1 TL Zimt
- nach Belieben: 1 klein gewürfelten Apfel, 20g gehackte Walnüsse
HOW TO:
- Den Ofen auf 200° C vorheizen.
- Die Zucchini raspeln.
- Die restlichen Zutaten zu einem glatten Teig vermixen und anschließend die Zucchini unterheben.
- Nach Belieben den klein gewürfelten Apfel und/oder die gehackten Walnüsse untermengen und bei 200° ca. 20 Minuten backen bis die Tarte oben goldbraun ist.
